Course Summary

Olives and olive oil have been a feature of Mediterranean life for thousands of years. Mark Dymiotis draws on his Mediterranean heritage to discuss the traditional and healthy ways of preserving olives using natural and easy-to-follow methods for effective storage and good flavour. Olive oil production and storage are covered extensively, and olive oil classification is demystified.
