Course Summary

Explore the vegan kitchen with Nutritionist Rita Varelas as she shows you how to prepare delicious dishes inspired by vegetables, grains, nuts, fruits and other plant foods. Along with a demonstration, Rita will explain the nutritional benefits of plant-based diets as she prepares a smorgasbord of delectable vegan dishes, including simple salads, mains and desserts.

This course will open your culinary mind to new possibilities in the world of vegan cuisine. Rita Varelas will prepare a diverse range of dishes, including a cauliflower vegetable pizza, pumpkin, chickpea and coconut curry, lentil, parsnip and walnut salad and whole wheat maple cinnamon buns.

Need something sweet? Rita has you covered! The demonstration will finish with Rita’s signature upside-down toffee apple cake.

Following this course, students will feel confident in recreating vegan meals at home. This confidence will extend to a good understanding of the health benefits of cooking with plant-based ingredients.

The course is held at CAE 253 Flinders Lane Melbourne in the onsite Journal Canteen Restaurant. Access to the restaurant is via a short flight of stairs located in the ground floor foyer.
